In 1822, Monsieur Popelin, a pharmacist, set up a shop devoted to olive oil in Paris and A L'Olivier was born. Today, the family owned company still makes amazing olive oil, along with high quality vinegars and nut oils. This vinegar is simultaneously fresh, sour and smooth. Use it instead of lemon juice to finish grilled fish, or toss with a variety of fresh fruits.
