Abondance is named after the village in the Haute-Savoie region of the French Alps where it was first produced centuries ago. An AOC designated cheese, each wheel is handmade using the raw milk of Abondance cows and traditional methods in the high altitudes of the region. Aged for at least 100 days, the golden paste is light yellow with a slight sheen and a few small eyes dotted throughout. The texture is smooth and rich. Like many other alpine cheeses, Abondance has a floral flavor with undertones of hazelnuts and nice acidity. Although it is a great melter, Abondance is special enough to stand on its own.
