Arpea is an atypical sheep's milk cheese from the Pyrenees region of France. Unlike some of the more well-known cheeses from the same region like Ossau-Iraty, its rind is washed, giving it a softer texture and a more assertive aroma. The paste is pliable but not runny, and it has a robust flavor without tasting too much like the barn.
