This vinegar comes from the French seaside town of Banyuls, home to one of France's great wines of the same name. Aged in oak barrels for 5 years, Banyuls is uncommonly smooth. It has distinct aromas of walnut, spice, vanilla and licorice. Its nutty flavor profile makes it the perfect ingredient for vinaigrettes made with hazelnut or walnut oil. It's also great for deglazing - as it adds a balanced acidity to duck, game and foie gras.
