In the hills of southern Umbria, The Bartolini family has been growing olives, grains, and legumes since the 1850's. The production of farro, an ancient hulled wheat, dates back to early civilization. When cooked, its dark, plump berries add sweet, full-bodied flavor, chewy texture, and high nutritional value to whatever you are cooking. It makes a fabulous grain salad or hearty risotto. It is also a great substitute for rice when added to brothy soups.
