Sometimes referred to as the cow's milk version of Roquefort, Bleu d'Auvergne is much creamier and more approachable. Rather buttery with a subtle, earthy grassiness, this blue is assertive enough for your cheese board, but also perfect as a recipe ingredient. Great for everything from making steak butter to stuffing dates.
