The Onetik cheese dairy is located in the small village of Macaye at the foot of the Pyrenees Mountains. Since 1982 they’ve collected milk from a cooperative of farmers practicing transhumance to make authentic cheeses using the traditional methods handed down by generations. Made from 100% sheep's milk, this staff favorite is aged for over 2 months, resulting in a semi-firm, but yielding texture. The blue-veined interior is pronounced in flavor, with notes of truffle at the finish.
