This lesser known cousin to Roquefort is made with 100% raw cow's milk, and was originally a less expensive alternative for those who couldn't afford the highly prized King of French Blues. It is assertive and full flavored, but remains approachable. With hints of grass and earth, it is an interesting blue that is perfect when you feel like trying something new. Fantastic with any wines from the Languedoc in Southern France.
