Cabot Clothbound Cheddar is the result of a highly successful collaboration between cheesemakers at Cabot's Vermont Creamery, and The Cellars at Jasper Hill in Vermont. Cabot makes wheels of clothbound cheddar and sends them to Jasper Hill for aging. After 10 months, beautiful wheels of mature Vermont Clothbound Cheddar emerge. Reminiscent of a classic English cheddar, it is at once sweet, savory, and tangy with a creamy but brittle texture.
