From the Murcia region of Spain, this mild goat cheese receives a coating of rosemary and lard in its final days of aging. Though the rosemary makes this cheese exceedingly herbaceous, it complements, rather than competes with the cheese itself. Murcia is known for its excellent quality of goat’s milk and this cheese is a reflection of it. The paste is ivory white & creamy with a bright, pleasantly piquant flavor.
