Cantal is one of France's oldest and most traditional cow's milk cheeses. The texture is semi-firm, moist and slightly crumbly with a natural rind mottled with brown, gray, and rust colored molds. Mild and accessible, it has flavors of butter, fresh milk, nuts, citrus, and caramel. Classically used in gratin, fondue, and soups, Cantal also works well paired with fresh fruit or roasted nuts.
