Domaine Castelas started making olive oil in the heart of the Provence in 1997. Although not the oldest, they have been recognized as one of the finest producers in the area. Their award-winning Noir d'Olive oil begins with fully ripe olives that are picked, stored, and gently fermented before pressing. The result is a unique flavor that is akin to a French oil cured olive. It has a subtly fermented note, with hints of black tapenade, cocoa and vanilla, with truffley finish. It is perfect for garlic-seasoned salads, for making mayonnaise, and for drizzling on confits, mushrooms, and mashed potatoes.
