From the Burgundy region in France, this creamy cow's milk cheese is a close cousin of Epoisses, with one primary difference. Instead of being washed in Marc, the local pomace brandy, it is washed in one of the region's great white wines - Chablis. Full flavored but not as pungent as Epoisses, Affidelice is ultra-silky in texture with hints of mushrooms. Perfect with a glass of Burgundy, or...Chablis!
