Originally an Appenzeller maker, Walter Rass began experimenting and fine-tuning recipes to create this remarkable cheese - the result is truly special. It is washed in wine and spices and aged for a minimum of 10 months. Deep in flavor with a slight fruitiness, it is firm yet creamy, with notes of roasted nuts and butterscotch.
