Coolea is a Gouda-style farmhouse cheese made by Dick and Helene Willems, who moved from Holland to Cork County in the late 1970’s. They started making Coolea as a hobby in 1981 and officially started the business in 1986. Their son, Dick Jr., took the reins in 1998. The flavors of Coolea are sweet and rich, with hints of caramel, butterscotch and honey. Smooth and close textured, it is reminiscent of Dutch Gouda with the help of lush Irish grass.
