Named World’s Best at the 2017 World Cheese Awards, this cheese is made by Catherine Mead and the team at Lynher Dairies near Truro, West Cornwall. The make is inspired by Gouda, and the unique use of Alpine-style starter cultures encourage flavors of tropical fruit & roasted cashews. Smooth and well-rounded, it has a butterscotch aroma, nutty sweetness and a depth of flavor that is the result of its lengthy maturation process. The dark, stippled wax rind is a great visual contrast for a cheese board!
