This rustic wheel of goat cheese is aged for 5 months in the historic natural caves of Italy's Lombardy region that date back to the 9th century. It has a rough, natural mold rind with a slight microflora bloom. The ivory paste is soft and smooth along the rind, and gets crumbly and drier toward the center. Milky and dense, it has a pleasant tartness and an earthy aroma.
