There are several urban legends surrounding how this cheese came to be. What we know for sure - this aged version of Monterey Jack was developed over 100 years ago. Aged 7 to 10 months, Dry Jack quickly became a less expensive domestic alternative to Italian Parmigiano-Reggiano. Made with raw cow's milk, it is dry, sweet, and nutty. Perfect for grating, shredding, slicing, cooking or just plain eating.
