A French cow’s milk cheese with a bloomy rind, named for the decorative fern, or “fougere,” topping each wheel. Fougerus has notes of cellar and mushroom on the nose, a buttery mouthfeel, and flavors of earth, mushroom, nuts and fried egg. Fougerus is a staff favorite for good reason. It’s mild enough for the less adventurous, but complex enough to satisfy the committed cheese lover, making it the perfect addition to your cheese plate.
