One of France's oldest cheeses, the production of Fourme d'Ambert dates back to Roman times. Named for its tall and narrow cylindrical shape, it is customarily cut into disks rather than wedges. This makes an eye-catching addition to any cheese platter. It is earthy and mushroomy, with a dense creamy texture. Perfect on a burger, with dried fruit, honey, or a glass of port.
