Founded by Chef Paul Bertolli in San Francisco, Fra'Mani has been making an array of handmade, delicious salume products since 2006. Mortadella is not bologna, it is what bologna aspires to be. Fra' Mani uses only prime cuts of pork shoulder, leg, and belly that is meticulously hand-trimmed and minced. After slow roasting, it's finished with a light fruitwood smoke. We slice this thin, ready for your antipasti platter or sandwich. Natural nitrates.
