Slightly younger than its sharper counterpart, Gorgonzola Dolce is very soft and silky, sometimes even runny. The paste is light yellow with faint blue and green marbling. With a mild and delicate flavor, this is the perfect cheese for melting into a sauce. It's also lovely spread on warm crusty bread, or paired with candied figs.
