What happened when a couple of Somerset natives relocated to the Isle of Mull? They built a farm and the island's only creamery. After production, Isle of Mull Cheddar is aged by Neal's Yard in London for about 18 months. Depending on time of year, this farmstead cheddar can vary in color from pale yellow to bright white. Occasionally natural blue veining will occur, but don't let this deter you; consider it a tasty bonus! Complexly flavored, Isle of Mull is at once sharp, tangy, fruity and earthy.
