Michelin-starred Chef Thomas Keller of The French Laundry in Napa Valley and Armando Manni, producer of legendary Italian olive oils, collaborated to develop some of the world’s finest chocolate with their proprietary method of custom processing each batch of cacao. K&M Extravirgin Chocolate uses a small amount of Manni’s extravirgin olive oil in place of cacao butter, which gives the chocolate a silky texture. Their Coffee and Sea Salt Milk Chocolate uses cacao from Ecuador’s Hacienda Victoria and has notes of coffee, caramel, and sea salt and gets a tantalizing crunch from coffee beans roasted locally in Napa Valley.
