La Vecchia Dispensa started as a family restaurant in Modena in 1973. Since the 1980s, however, they have been wholly dedicated to the production of fine balsamic vinegar. Aged for a minimum of 12 years in small batches, this vinegar is notably sweeter than its 10 year counterpart. Highly viscous and intensely aromatic, the flavor is fresh and fruity with delicate acidity. This balsamic is amazing drizzled over aged cheeses, grilled vegetables, fresh berries or even ice cream.
