In medieval times the term laudemio indicated the part of the harvest reserved for the feudal lord. As the best part of the harvest, these oils were only offered to noblemen. Today Laudemio is the name of the consortium that was created in 1986 to attain the highest quality oil with standards of production that exceed normal regulations. The result of all of this is an amazing olive oil. A Tuscan estate oil, it is made with olives harvested by hand and pressed the same day at the property's own mill. Intense and brilliant green in color, it has aromas of fresh cut grass and artichoke, with a classic peppery finish. Here's what you do: grill a bone-in rib eye steak. Let it rest, slice it and fan over a bed of arugula. Sprinkle with sea salt, a squeeze of lemon and a drizzle of Laudemio Frescobaldi. Enjoy with a Tuscan red.
