This is a secret you want in on! Produced by Fromagerie Agour, Le Secret de Compostelle is an aged sheep milk cheese in the “brebis Pyrennes” style, similar to Ossau Iraty. Its name pays homage to a passage between the French and Spanish Basque regions, which was commonly traversed by pilgrims on their way to the city of Santiago de Compostela (Compostelle in French). Aged around eight months, this cheese is dense and firm, with a smooth, creamy texture. The natural rind is mildly pungent and savory, while the paste of the offers notes of cream, caramel, nuts, mushrooms, and olives.
