Leonardi Balsamic Vinegar was born in the hills of Modena where the typical grape varieties of Lambrusco and Trebbiano are grown to obtain the grape must that is transformed into one of the world's great delicacies. There is good balsamic vinegar, and there is Traditional Balsamic Vinegar. The former is very good, the latter is in a different league. Pure grape must is reduced, fermented & aged in a series of wood barrels until it has the flavor, texture & aroma to achieve Traditional status. There is no substitude for time, and no short cuts in the process. This Extravecchio (extra aged) DOP vinegar is the grand daddy of them all.
Aged a minimum of 25 years, it is nothing short of sublime. It has the perfect balance of sweet & sour, with a velvet texture that can be poured drop by drop. This is an occasion vinegar - perfect to drizzle on grilled vegetables, aged cheeses, cured meats, or fresh berries. For the purest enjoyment, pour a few drops into a spoon and enjoy!
