In Tunisia, this product is called M'hamsa, which translates into sundried wheat grains. The process starts by hand-mixing semolina, olive oil, water, and salt, and then pressing it by hand through screens. It is then preserved with olive oil and dried in the sun. After drying, the result is a nutty and earthy couscous unlike any other. It is perfect with virtually any Mediterranean or Northern African inspired dish - including stews, braised meats, fish and soups.
