The producer of this raw milk Manchego makes cheese in a small town called Daimiel located near Las Tablas national park. He has won 15 awards and counting since 2001. The rind bears the traditional basket weave design, and is rubbed with olive oil during its 9-12 months of aging. This is an exceptional cheese - it is nutty, buttery and balanced with a sweet lingering finish. It is perfect enjoyed simply with cured meats, marcona almonds and dried fruit.
