The producer of this raw milk Manchego makes cheese in a small town called Daimiel located near Las Tablas national park. He has won 15 awards and counting since 2001. Aged 4 months, the rind of this young Manchego bears the same destinctive basket weave design as its 12-month counterpart. Soft, milky and sweet, it has a mellow, lingering finish. It is perfect enjoyed simply with cured meats, marcona almonds and dried fruit.
