Moses Sleeper is made with pasteurized cow's milk by Jasper Hill Farm in Vermont. Named after a historic local pioneer scout, this cheese is akin to a more mild version of Reblochon. The flavor is approachable and savory with hints of fresh milk, hay, toasted nuts and butter. Beneath the thin, bloomy rind, the interior paste is ivory white in color with a semi-soft, gooey texture. Pairs well with a crisp apple, cured meats, and a crusty baguette.
