Pasteurized Goat - Latteria Sociale Santadi, Sardinia
Pantaleo is a unique goat’s milk cheese from Sardinia with very limited production. Aged a minimum of 100 days, it is made with milk from the Capra Sarda goat. The paste is ivory-colored with a pale rind and a sweet and clean floral finish. The off-dry texture makes it perfect to shave on salads or roasted vegetables, but its interesting flavor profile also make it perfect for a cheese plate.
