The king of Italian cheese, and one that belongs in your refrigerator 100% of the time - and it does not come in a green can. Parmigiano-Reggiano's different stages of maturity are recognized by aging seals given at 18, 24 and 30 months - this one is the 24 month version. You can grate or shave Parmigiano on just about anything except your fish; it is also underused as a table cheese. When you have grated all the paste you can, save the rind for flavoring stocks, soups and braises!
