Pecorino Ginepro is one of the most unique cheeses in our case. For the first month of aging this semi-firm, sheep's milk cheese is bathed in balsamic vinegar and juniper berries, then aged in oak barrels. The resulting rind is a mottled brown while the paste remains bone white with a slightly granular and flaky texture. Flavors are rich, sweet & herbal with aromas of earth and fruit.
