Aged a minimum of 120 days, this pecorino is firm, rich and nutty, with lingering hints of butterscotch. During aging, the exterior is rubbed with olive oil, giving the rind it's distinct rustic brown appearance. This is a cheese that you will return to again and again. As perfect for grating on pasta as it is on a cheese board.
