Made in Aveyron in the Midi-Pyrenees region of southern France, Perail de Brebis is a soft ripened sheep's milk cheese with a thin and velvety rind and a dense, creamy texture. It has faint aromas of hay and earth, but is mild and sweet enough to appeal to a wide audience. When allowed to reach room temperature, it will become extremely soft and runny - perfect for spooning onto a crusty loaf of bread. Enjoy with a crisp white or rosé from southern France.
