Named after the river Piave in the Veneto region in northern Italy, this cheese is an younger version of Piave Vecchio. Made with cow's milk and aged for 6 to 8 months, the flavor is nutty and sweet, with hints of tropical fruit and caramel. Dense and semi-firm in texture, Piave is firm enough for shaving and grating, but is most often enjoyed as a table cheese with wine and charcuterie.
