Named after the river Piave in the Veneto region in northern Italy, this cheese bears resemblance to a younger version of Parmigiano-Reggiano. Made with cow's milk and aged for approximately 10 months, the flavor is nutty and sweet with hints of tropical fruit. Dense and firm in texture, Piave Vecchio is hard enough for shaving and grating, but is most often enjoyed as a table cheese with wine and charcuterie.
