Made from 100% sheep's milk, Canestrato is a great all-around pecorino. Produced in Sardinia, it is just as good on a cheese board as it is as a grating cheese. Semi-firm and slightly crumbly in texture, it has a nice balance of salt and sweet, finishing with a pleasant spice. The rind features distinctive hatch marks left by its traditional wicker basket mold during aging.
