Nebbiolo is the noble grape behind the likes of Barolo and Barbaresco. Notoriously difficult to grow, this grape rewards patient and skilled growers with fruit that is similarly delicate to Pinot Noir but with a little bit more bitter, earthen characteristics. While most famously known for wines that see the grape spending a long time in wood, this version of the grape is much more approachable in its youth while still showing the drinker how interesting it can be. Try it out with heartier pasta dishes and cream sauces- don't forget that this area of Italy is known for white truffles, too!
