Schnebelhorn is made with raw milk which comes from Swiss Brown / Braunvieh cows. Its creator, Reto Güntensperger, is a third-generation cheesemaker in the canton of St. Gallen. His grandfather made Appenzeller, his father made Appenzeller, but Reto wants to branch out. When the Swiss Cheese Union collapsed in 1999, he had his chance. Cream enriched & aged for 8 months, it has aromas of toasted hazelnuts, brown butter & roasted onions. The paste is firm & pale gold, with flecks of crystals & a creamy finish.
