Sottocenere al Tartufo is not your average truffle cheese. This semi-soft Venetian cow's milk cheese is loaded with black truffle shavings throughout the paste and dusted in ash during the aging. A decorative leaf and the use of various spices like nutmeg, clove and coriander, along with a hint of truffle oil on the rind, add delicate aromas that are truly unique. Most importantly, the cheese itself is in perfect creamy balance with the truffles. It is a striking addition to any cheese board, and melts wonderfully. Try it with with fresh mozzarella and roasted mushrooms on a pizza.
