Taleggio is a cheese whose origin dates back to the 10th century. Production takes place in the Val Taleggio region of northern Italy, from which its name is derived. Its pungent, washed-rind aroma belies its more mild, buttery and mushroomy flavor. The texture is creamy, rich and spreadable, becoming increasingly softer as the cheese ages. Taleggio's creamy texture makes it perfect to fold into risotto, pasta and sauces, but there is perhaps no better way to enjoy it than with the end of a fresh baguette.
