Tomme de Chèvre de Savoie is an artisanal goat’s milk cheese made in the Savoie and Haute-Savoie regions of France, in the valleys of Abondance, Maurienne and Tarentaise in particular. Made by the Schmidhauser Family, who moved to the Rhone-Alps region of France from Switzerland in 1961. The Schmidhausers originally used abandoned air raid shelters as their aging cellars, but since have moved to the ancient stone quarries of the village of Alex. The paste is yellow & soft, with a creamy mouthfeel. The flavor is nutty, earthen and rich. With melting qualities similar to Raclette, it’s not surprising that it is best enjoyed with potatoes, rustic bread & cured meats. Crisp white wines from the Savoie or Apremont are perfect with this mountain cheese.
