This goats’ milk tomme is matured for several months on chestnut planks in the Auvergne region of France. The terroir is populated by chestnut trees, which imparts a rustic taste, but keeps its paste sweet and accessible. Aged by Herve Mons, the texture is semi-soft & creamy.
