Tomme simply refers to the round/small shape of a cheese, combined with the region or town where it's made. In this case, it is a raw, cow's milk cheese from the mountainous Eastern region of the Savoie in the Rhone Alpes. One of France's ancient cheeses, it is mild & semi-firm with a golden paste and a mottled & rustic brownish-gray rind. Made from the skimmed milk left over from the production of butter, the flavor is earthy & rustic with a pleasant tang.
