Made by La Caseria in the Leon region of northwest Spain, Valdeon is an assertive blue cheese made with a blend of cow and goat's milk. Often compared to Spain's most popular blue, Cabrales, Valdeon is slightly creamier and not quite as piquant in flavor. Hearty and densely veined, it has a nice balance of salt and spice with a pleasant underlying sweetness.
